Enchilada cu pui la gratar

Incercand sa fac mancarea pentru DC (Enchilada cu pui la gratar), am constatat cat e de greu sa gasesti in Romania ingrediente mexicane. In reteta originala sosul era verde, facut cu niste legume asemanatoare cu rosiile verzi, numite  tomatillos. Tortillas trebuia sa le fac cu faina de porumb – masa harina numita pe la ei pe acolo, care nu e malai! N-am gasit de nici unele, asa ca m-am adaptat. Fiindca e prima oara cand fac mancare mexicana, nu m-am indepartat prea mult de la ce au spus  initiatoarele acestei retete din luna mai/

Reteta cuprinde tortillas, pe care le-am facut asa
Piept de pui la gratar (eu l-am facut in tigaia antiaderenta) a fost apoi taiat apoi fasiute.

Si sos mexican rosu. Red salsa.

Enchilada cu pui la gratar

Ingrediente pentru 4 persoane

  • 2 piepti de pui
  • 2 linguri ulei
  • sare, piper
  • 12 tortillas
  • 250 g mozzarella, taiata cubulete mici
  • sos rosu (reteta e mai jos)
  • cateva seminte crude de dovleac, prajite uscat

Sosul rosu

  • 2 linguri ulei de masline
  • 2 cepe, tocate marunt
  • 3 catei de usturoi, tocati marunt
  • 1 ardei gras, taiat cubulete
  • 1/2 lingurita chlli pudra
  • 1 lingurita chimen pudra
  • 1/4 lingurita scortisoara pudra
  • 1 conserva de rosii taiate
  • 300 ml supa clara de pui
  • 2 linguri unt de arahide
  • 1 lingura oregano tocat
  • sare dupa gust
  • ardei iute, daca iti place hot (eu n-am pus)

 

Mod de pregatire:
Pieptul de pui se da cu sare si piper si se pune putin pe gratar, ca sa fie 3/4 facut. Se taie apoi fasii. Pentru sos, incalzeste uleiul si caleste putin ceapa. Adauga usturoiul, chilli, chimen, scortisoara, oregano caleste putin Adauga ardeiul si caleste putin. Pune rosiile si supa.

si Fierbe 2 clocote. Adauga untul de arahide, potriveste de sare si fierbe la foc foarte mic 10 minute.  Daca se ingroasa prea mult mai aduga apa (sau supa de pui).
In timp ce se face sosul, incalzeste cuptorul la 185 C. Cand acesta e gata, pune intr-o tava mare 4 tortillas. Deasupra pune 1/3 din pui, apoi 1/3 din sos si 1/3 din branza.
Continua cu inca 2 straturi la fel.

Pune la cuptor 20 minute.

Mi-a placut foarte mult provocarea de luna asta. A iesit o mancare foarte buna, care ajunge lejer pentru 6 portii. Sosul trebuia sa fie mai mult si mai subtire. Cred ca 2 cutii de rosii ar fi mers de minune. Poate si putin mai iute, dupa gustul meu.

 

ENGLISH RECIPE

Our hosts this month, Barbara of Barbara Bakes and Bunnee of Anna+Food have chosen a delicious Stacked Green Chile & Grilled Chicken Enchilada recipe in celebration of Cinco de Mayo! The recipe, featuring a homemade enchilada sauce was found on www.finecooking.com and written by Robb Walsh.

Trying to cook this dish for DC, I realised how hard it is to find Mexican ingredients here in Romania.
The original recipe of green salsa,was using some vegetables called tomatillos (they look like green tomatoes, but taste a bit different). The best tortillas are made from masa harina ( a tipe of corn flour). None of these could be found here, so I had to adapt. Not very much, as long as is my very first time cooking Mexican food. So I had to stick to the May recipe.
I firstly made my tortillas like here
Grilled chicken brest, cut into stripes.

  • 2 piepti de pui 2 chicken brests
  • 2 linguri ulei 2 tbs oil
  • sare, piper salt, pepper
  • 12 tortillas
  • 250 g mozzarella, taiata cubulete mici mozzarella, cut in small cubes
  • sos rosu (reteta e mai jos) red salsa (recipe follows)
  • cateva seminte crude de dovleac, prajite uscat  pumpkin seeds, toasted
    • 2 tbs olive oil
    • 2 onions, finely chopped
    • 3 cloves of garlic, finely chopped
    • 1 green bell pepper, cut in small cubes
    • 1/2 tsp ground chili
    • 1 tsp ground cumin
    • 1/4 tsp ground cinnamon
    • 1 can diced tomatoes
    • 300 ml chicken stock (homemade)
    • 2 tbs peanut butter
    • 1 tbs oregano, chopped
    • salt, to taste
    • some hot peppers chopped, if u like it hot (not me!)

Sprinkle the meat with salt and pepper and grill it.  When it is 3/4 done, take it and cut it in stripes.
For salsa, heat the oil and fry the onion a bit. Add garlic, chili, cumin, cinnamon, oregano and fry 1 min. Add pepper and fry 1 min. Add tomatoes and stock and let it boil a bit. Add peanut butter, taste the salt and let it simmer for 10 min. If it is too thick, add some water or stock.
Meanwhile, heat the oven at 185 C. In a big trey put a layer of 4 tortillas. On top place a third of the meat, a third of the salsa and a third of mozzarella cheese.
Continue in the same way with 2 more layers. 20 min in the oven.

I liked very much this month’s challenge. The food was very good, tasty and a lot (6 persons can eat from this, not 4). The red salsa should be a bit thinner. I think that 2 cans of tomatoes would be better. And maybe a bit hotter (next time I will add some hot peppers).

    Eu n-am apucat s-o gatesc inca, la inceput m-am blocat cu ingredientele, acum e si bebeul meu bolnav, sper ca nu te superi daca ma inspir de la tine ca s-o fac, bineinteles dau link spre tine. Oricum felicitari, arata bine!

    Laura, dupa cum vezi nici eu n-am gasit ingredientele originale, dar am adaptat. Eu zic sa incerci s-o faci, pentru ca este foarte gustoasa. Si, bineinteles ca te poti inspira de la mine. Te pup si sanatate bebelului.
